Banana Bread
Ingredients:
3 VERY Ripe Bananas
5 tbsp. Unsalted Butter, melted
½ Cup Granulated Sugar
1 Large Egg, beaten
1 tsp. Vanilla Extract
1 ½ Cups AP Flour
1 tsp. Baking Soda
1 tsp. Espresso Powder
½ tsp. Cinnamon
¼ tsp. Kosher Salt
¾ Cup Chocolate Chips, divided
Steps:
1. Preheat oven to 350 degrees F and adjust the rack to the middle position.
2. Prepare a 9”x5” loaf pan by greasing the inside with unsalted butter.
3. In a small bowl, sift together the dry ingredients, (flour, baking soda, salt, espresso powder, cinnamon). Set aside.
4. In a large bowl, mash the bananas until mostly lump-free.
5. Add the melted butter to the mashed banana and stir together until thoroughly combined.
6. Add the sugar, egg, and vanilla extract and stir until just combined.
7. In two additions, stir in the dry ingredients until fully combined.
8. Fold in ½ cup of the chocolate chips until evenly distributed throughout the batter.
9. Pour the batter into the prepared loaf pan and level out the top with a spatula. Sprinkle the remaining ¼ cup of chocolate chips over the top.
10. Bake for 50-60 minutes, or until top is puffed, golden brown, and a toothpick comes out clean.
11. Let cool completely before removing from the loaf pan, slicing, and serving.
