Cornbread
Ingredients:
1 Cup All Purpose Flour
1 Cup Cornmeal
1 Tsp. Baking Soda
1 Tsp. Salt
1/2 Tsp. Smoked Paprika (optional but recommended)
1/2 Cup Unsalted Butter
1/2 Cup Granulated Sugar
1/4 Cup Honey
2 Large Eggs
1 Cup Buttermilk
Steps:
1. In a mixing bowl, combine the dry ingredients, (Flour, Cornmeal, Baking Soda, Salt, and Paprika*). Set aside.
2. Preheat oven to 375 degrees F, adjusting the rack to the middle position, and coat the inside of a 9x13” glass baking dish with a generous amount of butter. (Feel free to go full Paula Dean on this step. Remember, you’re making cornbread.)
3. In a medium-sized saucepan or pot, melt the butter, sugar, and honey over low to medium-low heat, stirring semi-frequently to combine.
4. Once melted and combined, whisk in eggs one at a time.
5. Whisking continuously, pour buttermilk into the mixture until fully combined then remove from heat.
6. Pour the dry ingredients into the pot and, using a rubber spatula, do a combination of stirring and folding to combine. (You do not want to over-mix but you also want to break up any large clumps that form!)
7. Pour the cornbread batter into the prepared baking dish and transfer to the oven. Bake for 20-30 minutes, until the top is set and golden brown, and an inserted toothpick comes out clean.
8. Remove from oven and let cool in the pan before slicing and serving. (Tastes best slathered with honey or maple butter!)
