Loaded Baked Sweet Potatoes

Ingredients

2 Medium Sweet Potatoes

2 strips Thick-Cut Bacon, cooked and chopped (optional)

1/2 Medium Avocado, sliced

2 oz. Soft Goat Cheese

1 oz. Extra Sharp Cheddar Cheese, shredded or slice from the block

Olive Oil

Sea Salt

Black Pepper

Hot Sauce (Optional)

 

Steps

1. Preheat oven to 425 degrees F and adjust rack to the middle or upper-third position. Line a small or medium sized baking sheet with parchment paper.

2. Wash and scrub sweet potatoes thoroughly, then poke around the outsides with a fork. Rub olive oil generously around the sweet potatoes and toss with sea salt and black pepper.

3. Place sweet potatoes on the parchment-lined baking sheet and bake in the oven for 45-50 minutes.

4. While potatoes cook, prepare your toppings: cook and chop the bacon, slice the avocado into slices of your desired thickness, slice strips of cheddar (if cutting from the block).

5. Remove from oven and slice open with a pairing knife, splitting the tops down the middle like a hot dog bun.

6. Open the sweet potatoes and layer in toppings: Goat Cheese, Avocado & Bacon, Extra Sharp Cheddar.

7. Turn on your oven’s broiler function and adjust rack close to the flame, (but not so close that the potatoes will touch the flames).

8. Place sweet potatoes back in the oven and broil for 30 seconds to a minute, or until cheese is nicely melted, but not burnt.

9. Drizzle on hot sauce, if using, and sprinkle on a pinch of flake sea salt for serving.
