Marble Pound Cake

Ingredients

Cake

1 1/2 Cups All-Purpose Flour, minus 2 Tbsp.

2 Tbsp. Corn Starch

2 Tsp. Baking Powder

1/2 Tsp. Kosher Salt

1 Cup Unsalted Butter, at room temperature

1 1/2 Cups Granulated Sugar

4 Large Eggs, at room temperature

2 Tsp. Vanilla Extract

2 Tbsp. Unsweetened Cocoa Powder

1/2 Cup Chocolate Chips (Any Kind)

Glaze

1 Cup Confectioners Sugar

2 Tbsp. Unsalted Butter, melted

2 Tbsp. Whole Milk

1 Tsp. Vanilla Extract

 

Steps

Cake:

1. Sift flour, cornstarch, baking powder, salt through a sifter or mesh sieve twice, into a bowl. Set aside.

2. Preheat oven to 350 degrees F and adjust the rack to the middle position. Butter the inside of a 9”x5” loaf pan and line the bottom and sides with parchment paper.

3. In the bowl of a stand mixer with a paddle attachment, beat together the butter and sugar, slowly increasing the speed to medium-high, until combined and fluffy, about 5-7 minutes.

4. Scrape down the sides of the bowl and turn the mixer to its lowest speed and, one-by-one add eggs to the mixture, thoroughly combining each one. Add vanilla during this step, as well.

5. In two additions, add the dry ingredients to the batter and stir until thoroughly combined, stopping to scrape down the sides as necessary.

6. Remove from mixer and pour half of the batter into a separate mixing bowl.

7. In the separate mixing bowl, stir in 2 tablespoons of cocoa powder until thoroughly combined. Mix in chocolate chips and stir to evenly distribute throughout the batter.

8. Alternating between the plain and chocolate mixture, scoop batter into the loaf pan 1/2 cup at a time. Once all the batter has been transferred to the loaf pan, use the edge of a butter knife or a long skewer, trace a figure-eight pattern in the batter to create a swirl effect.

9. Transfer the pan to the oven and bake for 50-70 minutes, or until the top is fully set, golden brown, and a skewer or toothpick comes out clean when inserted.

10. Remove from oven and cool in the pan for 30-45 minutes then transfer to a wire rack until completely cooled.

Glaze:

1. Sift confectioners sugar into a small bowl.

2. In a small saucepan over medium heat or in a microwave safe bowl, melt butter then let it cool slightly.

3. Pour melted butter, milk, and vanilla onto the sugar and stir with a spoon until fully combined and smooth.

4. Pour and spread over the pound cake and allow it to set for 60-90 minutes before slicing and serving.
