Simple Apple Fritters

Ingredients

Fritters

2 Large Apples, peeled & cubed/diced

2 Tsp. Lemon Juice

1/2 Tsp. Ground Cinnamon

1 Cup All-Purpose Flour

2 Tsp. Baking Powder

1/2 Tsp. Kosher Salt

1/2 Tsp. Ground Cinnamon

2 Large Eggs

1 Tbsp. Granulated Sugar

1 Tbsp. Light Brown Sugar

1/4 Cup Whole Milk

Vegetable Oil, for frying

Sugar Glaze

1 Cup Confectioners Sugar

2 Tbsp. Unsalted Butter, melted

3 Tbsp. Whole Milk

 

Steps

Fritters:

1. Peel and chop apples into 1-inch cubes and place in a large mixing bowl. Pour over lemon juice and sprinkle cinnamon on top then toss with a rubber spatula to evenly coat the apples. Set aside.

2. Sift flour, baking powder, salt, and cinnamon into a small bowl, set aside.

3. In the bowl of a stand mixer with a paddle attachment, beat together eggs and sugar until fully combined, starting at a slow stir then slowly increasing to medium speed. (Scrape the bottom of the bowl with a rubber spatula to ensure no sugar is sticking to the bottom and not mixing.)

4. Add the dry ingredients to the bowl and stir together at low speed until fully combined, stopping to scrape down the sides of the bowl as necessary.

5. Continuing to stir at low speed, slowly pour in the milk and continue to stir until just combined.

6. Remove the bowl from the stand mixer and fold in the apples by hand with a rubber spatula until thoroughly distributed in the batter.

7. Fill the bottom of a large frying pan with vegetable oil, about 1 to 2 centimeters deep and heat on a stovetop set to medium heat until temperature of the oil has risen to 375 degrees F or 190 degrees C. (Wow, Iā€™m using the metric system now!)

8. Once the oil has reached the right temperature, turn the heat down to low or medium-low and drop 1/2 Cup of the batter into the oil. Cook until the bottom turns a deep golden brown color, then flip and continue cooking until color is even all the way around the fritter.

9. Using a spatula, slotted spoon, or kitchen spider, remove the fritter from the oil and place on a wire rack over a baking tray.

10. Repeat steps 8 & 9 until out of batter, adjusting the heat of the oil as you go. (When the temperature dips below 375/190, turn the heat up slightly to bring back up, or if the temperature gets too high, turn down the heat.)

11. Optional: if you want to make bite sized apple fritters, just drop in individual batter-coated apple chunks and fry until golden brown using the same process described above! (Apple Fritter Donut Holes!)

12. Let fritters cool completely before covering with a sugar glaze.

Glaze:

1. Sift confectioners sugar into a small-to-medium sized bowl.

2. Pour melted butter & milk over the sugar and stir with a spoon or small whisk until fully combined.

3. One by one, dip one side of the apple fritters into the glaze and then hover over the bowl to ensure excess glaze drips off.

4. Flip over and set the non-glazed side on a baking tray lined with a silicone mat. Repeat steps 3&4 until all fritters are glazed. (If making Apple Fritter Donut Holes, simply drop each one into the glaze and roll around to evenly coat.)

5. Let glaze fully set before serving.

6. Enjoy!
