Sprinkle Cookies, but make them a sandwich
Ingredients:
Cookies:
2 Cups AP Flour
½ tsp. Baking Soda
½ tsp. Kosher Salt
1 ½ Sticks Unsalted Butter, at room temperature
½ Cup Granulated Sugar
½ Cup Confectioners Sugar
¼ Cup Canola Oil
1 Large Egg
2 tsp. Vanilla Extract
1 Cup Rainbow Sprinkles
Frosting/Filling:
1 Cup Unsalted Butter, softened
2-3 Cups Confectioners Sugar
1 Tsp. Vanilla Extract
Steps:
Cookies:
1. In a bowl, sift together dry ingredients, (flour, baking soda, salt). Set aside.
2. In a stand mixer, add the sugar, butter, and oil and cream together on medium speed until light and fluffy.
3. Add egg and vanilla and beat until just combined.
4. Add the bowl of dry ingredients and beat together until just combined.
5. Cover the bowl with plastic wrap and chill in fridge for at least one hour. (Or, if you’re in a hurry, place the dough in the freezer for 10-15 minutes!)
6. Fill a shallow bowl with sprinkles.
7. Once dough is properly chilled, roll into balls approximately the size of a rounded tablespoon.
8. Roll the dough balls in the sprinkles so they are completely coated and arrange on parchment-lined baking trays, (approximately 1 inches apart).
9. Preheat oven to 350 degrees F and arrange the rack to the center position.
10. Bake cookies until golden brown at the edges, about 20 minutes, then cool on a wire rack.
Frosting/Filling:
1. In the bowl of a stand mixer, beat softened butter at medium to medium-high speed until light and fluffy, approximately 2-4 minutes.
2. Scrape down the sides then, working 1 cup at a time, combine the sugar and better at medium speed. (Start with two cups, then add more if you’d like it sweeter!)
3. While mixing, add vanilla and continue to mix.
4. Once fully combined, cover with plastic wrap and chill in the fridge for 10-15 minutes to firm up.
Assembly:
1. Find matching pairs of cookies, (ones of roughly the same size, usually each cookie has one very good match. Like it was meant to be, right? Well, fun fact time: the base cookie of this recipe is an “Italian Wedding” cookie.), then set them aside.
2. Working one pair at a time, scoop a rounded tablespoon of frosting into the center of one cookie, then press together with the matching cookie. (Be sure not to over-stuff the sandwiches!) Repeat this step until all pairs are completed.
